Thanksgiving Menu Idea: Soup in a Pumpkin

If you’re looking for a good recipe for fall entertaining, or something to liven up your Thanksgiving menu, you have to try this soup recipe, made IN A PUMPKIN.  Its simplicity and impressiveness combine for a lovely result.

Do not let the title of the recipe fool you- this soup tastes nothing like pumpkin pie, but it could if you wanted it to.  In fact, it is one of those super easy dishes with only a handful of ingredients, that as soon as you taste it will inspire you to dream up a future customized version of it.  And isn’t that the mark of a good dish?  Something that begs you to make it again.  I dream of making this with perhaps a little cayenne pepper, or maybe some black beans, or toasted pumpkin seeds for garnish…or maybe all three of these.  Mmmmm.

For this first shot I followed the recipe basically to the letter, because it’s an Alton Brown original and Alton knows everything.  His recipe calls for one 4lb pumpkin though, and all I could find at the produce mart was baby pumpkins so I doubled the recipe and made four smaller soups rather than one big one.  It was so satisfying- comforting and complex and thoughtfully made in that way that makes food taste like love.  If you try it, let me know what you think of it.
